A delicious meal that uses pre-cooked grilled chicken- so it’s healthy and super fast!
Place sliced, pre-cooked chicken breast on a microwave safe plate.
Top chicken with 2 tablespoons of crumbled goat cheese and warm for 45 seconds.
Serve with chilled cilantro lime black bean salad, and side of sliced tomatoes, sprinkled with salt and pepper.
Cilantro Lime Black Bean Salad Recipe:
1 can of black beans, rinsed and drained
1 tablespoon olive oil
small bunch cilantro, chopped
1/4 of a red pepper, diced
1/2 lime, juiced
1/2 of a tomato, chopped (green, if available)
salt to taste
Mix all ingredients and serve chilled. Yummy!
